If you think most postres take a ton of work to make, think again! Here are a couple recipes for some of the easiest, fastest postres you can whip up in no time.
Coconut-Pineapple Paletas.
Coconut-pineapple paletas are some of the best summertime postres around. All you need is a can of coconut milk, three-quarters of a cup of half-and-half, half a can of sweetened condensed milk, a quarter-teaspoon of salt, a quarter-teaspoon of vanilla extract, half a cup of shredded coconut, and half a cup of minced pineapple. Blend everything but the fruit together until it’s all smooth, and then add the coconut and pineapple. Pour the mixture into an ice pop mold, let it freeze, and enjoy.
Biscochitos .
Biscochitos are cookie-like postres that take less than an hour to make. All you need is six cups of all-purpose flour, a quarter-teaspoon of salt, three teaspoons of baking powder, two cups of shortening, one and a half cups of white sugar, two teaspoons of anise seed, two eggs, a quarter-cup of brandy, a quarter-cup of white sugar, and a teaspoon of ground cinnamon. Once you’ve got all that, begin by preheating your oven to 350 degrees. Sift the flour with the baking powder and the salt. Cream the shortening with the sugar and anise seeds until it’s fluffy, and then beat in the eggs one at a time. Mix in the brandy and the flour until it’s well blended. Then, turn the dough out on a floured board, and roll it so it’s about half an inch thick. Cut it up, and dust it with a mixture of a quarter-cup of sugar and a teaspoon of cinnamon. Bake your cookies for at least 10 minutes, and there your postres are!
